Thanksgiving is right around the corner, and we’ve found the perfect dish for your next family dinner!


  • 1 pound yellow squash, sliced
  • 1 pound zucchini, sliced
  • ½ onion, diced
  • 1 cup shredded Cheddar cheese
  • ½ cup biscuit baking mix (such as Bisquick®)
  • ½ cup butter
  • 2 eggs
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 10 saltine crackers, or as needed, crushed
  • ¼ cup bread crumbs


Step 1. Preheat your oven to 325ºF (165ºC)

Step 2. Boil a large pot of water. Add and cook the yellow squash, zucchini, and onion at a boil for 15 minutes, until they are tender. Drain and transfer to a large bowl.

Step 3: Add in the cheddar, baking mix, butter, eggs, sugar, and salt to the vegetables and mix. Make sure you mix until you melt the butter and the baking mix dissolves. 

Step 4: Fold in the crushed crackers until they absorb the mixture. Then, pour it into a 1 ½ quart casserole dish. Top with bread crumbs.

Step 5: Bake until you see the golden brown top and melted cheese. This is about 30 minutes.
